1.MORCON

1kl beef, sliced as for morcon,3/4"thick,in piece,2tbsps.calamsi juice,1/4 c soy sauce,4pcs vienna sausage, cut into 4 diagonally,2pcs sweet gherkins or 4 pcs.sweet pickles, cut in thin long strips,2 hard cooked eggs,sliced,cut in strips 1/2pc carrot, cut into long strips,3slices bacon,2tbsps flour,1/4 c cooking oil,3pcs bovillon cubes dissolved in 3 c boiling H2o,1/4tsp salt.

Marinate beef in calamansi juice &soy sauce .arrange strips of vienna sausage, sweet gherkins ,hard cooked eggs,cheese,carrots &bacon on marinated beef. Roll neatly and tie with a string. Dredge in flour then brown in hot cooking oil. Transfer to a a big sauce pan. Add bouillon water. Season with salt lover and simmer until beef is tender.Slice,arrange in a Platte. Pour sauce on top garnish with springs of parsley.

2.Hot  Cake

1 1/2puswelang arina,2 1/2 tsps.baking powder,1 pc egg,3/4 puswelang gatas,3 tnsps asukal,3/4 tsp asin,3 tbsps (mantikilya)

Salain(Sift)ang arina at tumakal ng 1 1/2 puswelo.Ihalo ang asukal ,baking powder at asin.Salain uli.Batuhin ang itlog,ihalo ang gatas at mantikilya.Unti-uniting ihalo ito sa arina.Haluin sa pamamagitan ng sandok o malaking kutsara hangganng sa magpantay ang pakalapot ng arina.

Ang piliin na oagpiprtuhan ay yaong pantay at hindi yaong kawali na malaki ang puwit,upang lumatag nang husto ang ibubuhis na arina at magiging pareho ang kapal ng hot cake.

Isalang ang kawali at kapag mainit na ay pahiran ng kaunting mantika.Magbuhos dito ng isang ng kauntint mantika.Magbuhos dito ng isang takal sa sinagkapan ng arina kailangan ay mahina ang apoy.Kapag bumubula naang ibabaw ay bilingin upang ang bula na ang ibabaw ay bilignin iupang ang kabilang panig naman nito ang maluto.Ihain nang mainit pa.Pahiran ngmantikilya saibabaw at buhusan ng syrup o arnibal.

3.Pineapple-Upside Down Cake

2tbsps butter,1/2 c brown sugar.4slices pineapple,drained,1 1/4 pineapple juice,1 1/4 c cake flour,2 tsp baking powder,1/2tsp salt,1/3c butter,1/2 c sugar,1 pc egg,beaten,1/2 c milk,1/2 tsp vanilla.

 

Melt butter in 8x8 inch pan. Sprinkle with sugar &pour pineapple juice. Arrange pineapple slices. Sift dry ingredients together. Set aside. Cream butter &add sugar gradually, creamy well. Add unbeaten egg &beat well. Combine milk &vanilla. Add alternately with dry ingredients to creamed mixture. Blend well after each addition. Four oven pineapple Bake on moderate oven 375oF 45.Minutes let stand 5 minutes, turn upside down.

4.Pineapple Paradise Cookies(drop cookies)

3 c all purpose flour,1/2 tsp baking soda,3/4 c brown sugar ,firmly packed,1c butter or margarine,1 large egg,2 tsp vanilla,1 small can crushed pineapple juice,1/3 c sweetened &shredded coconut

Preheat oven to 300oF.In medium bowl combine flour &baking soda &mix well. Set aside .In a large bowl blend sugars: add butter and mix to form a grainy paste, scraping down sides of bowl. Add egg,vanilla,crushed pineapple juice, beat until smooth. Add to the flour and blend until just combine. Do not over,mix.Drop by rounded teaspoons onto slightly greased baking sheets, If desired .Bake 20-25-minutesor until cookies begin to turn brown at edge .Transfer immediately to cool flat surface with a spatula.

5.Pork Chop May Curry at Gatas

3tbsps oil,6-8 pcs pork chop,2 tsps curry powder,1tbsps onio,sliced,1/2 c tinadtad na kamatis,2tbsps pulbos na gatas,2c tubig,1/4 tbsp paminta,1tbsp salt,1 tsps sibuyas na mura,pangganyak

Painitan ang mantika.Iprito hanggang pumula ang pork chop.Hanguning ang pork chop.Alisisn ang mantika ,mag-iwan lamang ng tatlong kutsara o sapat na dami para matakpan ang ilalim ng kawali.Lutuin ng isang minuto ang curry powder.Ihalo ang sibuyas at kamatis.Isama ang mga pork chop.Isalin din ang pulbos na gatas na tinunaw sa dalawang tasang tubig.Takpan .Ipagpatuloy ang pagluto hanggang lumambot ang prok chop tikman.Timplahan ng pampalasa at vetsin kung halos ay tuyo na ang sarsa hangurin.

6.Empanaditas

Empanada Crust,4c bread flour,2 tsps salt,1/4 c sugar,1/4 c cooking oil,4 pcs eggs,1/2 to 1/8 c H2o,1-2 c cornstarch to prevent,dough from sticking,oilfor deep fat frying.

Sift flour, salt &sugar. Set aside. in a large bowl, place eggs water &cooking oil. Add dry ingredients & mix thoroughly .Knead until dough is smooth &sa tiny.Divide dough into two portions.Cover and let rest for at least one hour.On a work a table sprinkle cornstarch.Roll out dough to form a long strip keeping the width to about 10".Roll out dough until it is papaer thin .Wind rolled out dough onto an 14-20"stick.when the dough is about four or five"in diameter moisten end of dough &press on rolled dough to seal.Push out dough from oiled stick &cut 1/2"thick slices (this will look like pinwheels).Rool out each piece till almost papers thin.Place filling in the centr &moisten edge.

7.Buko Pie

Filling: 1 c asukal,1/3 cornstarch,1 c sabaw og buko,1 c gatas evaporada,1tsp vanilla,2 c ginayat na buko

Painitin ang oven sa 375oF>ihanda ang 8"pie plate.Ihanda ang palaman,sa kaserola ,paghaluin ang asukal at corstarch.Ibuhos ang sabaw ug buko at gatas.Lutuin hanggang lumapot.Idagdag ang vanilla at buko.Palamigin.

Crust: 2 cflour,1/2 tsp salt,1tsp sugar,1/2 c oil,1/4 c shortening ,5-6 tbsps malamig na tubig .eggwash.

Sa isang mangkol,paghaluin ang harina ,asin,asukal,idagdag ang mantikilya at shortening.Haluing maigi.Madagdag ng sapat na tubigpara makabuo ng masa.Hatiin ang masa sa dalawa na masa malaki ang isang bahagi.Kunin ang mas malaking bahagi at padaanan ng rolling -pie hagnggang maging manipis at maging kasing laki ng pie plate.Ilipat sa pie plate para matakpan ang ilalim at mga gilid nito.Ibuhos ang palaman.Pisilin ang mga gilid para magdikit ang 2crust.Maglagay ng singawan sa pamamagitan ng pagtusok ng tinidor sa ibabaw ng tinapay pahiran ng eggwash.Hurnuhin ng 25-30 mins.hanggang pumula ang crush .palamigin bago hiwain.

8.Kropeck Made of Flour

3 c purpose flour,6 q/2 c broth,1 tsp garlic salt,2 tsps vetsin,3 tsps salt,2 tsps onion powder,2 tsp ground black pepper,yellow food color

Mix all ingredients together. spread mixture in a greased ,pan,steam,until paste is firm. Cool slightly. Cut into desired pieces. Dry under the sun until hard. Deep fry.

9.Basic Chocolate Cake

1c butter,1 1/2 sugar,5 egg yolks,2/3 c cocoa,2 1/2 c cake flour,1 tsp baking soda,1 c milk w/1tsp vinegar or calamansi,5 egg whites ,1/2 c sugar.

Cream butter  until &fluffy adding the sugar and yolks gradually. Sift flour, soda &cocoa together. Add the flour cocoa-soda mixture alternately with the milk beginning and ending w/the flour mixture. Beat egg whites adding the sugar gradually  until stiff but not dry. Fold the egg whites into the chocolate mixture using the cut &fold strokes. Pour into prepared pans & bake in moderate oven 350o for 40-45 minutes or until cake springs back when lightly touched. Cool the cake.

 

10.Spritz Cookies

1c soft butter or margarine,2/3 c sugar,3 egg yolks,1 1/2 c all purpose flour.

Mix thoroughly soft butter,sugar,egg yolks &vanilla. Work in flour with hands. Force the dough through cookie press onto un greased being sheets in letter S.rosettes,fluted bars or other desired shapes.Bae until set but not brown About 7-10 minutes at 400oF)

11.Sugar Cookies

2 1/2 c all purpose flour,1/4 tsp salt,2 tsp baking powder,1 c sugar,1/2 c margarine,2 eggs,beaten,1/2 tsp vanilla.

Sift together dry ingredients .Cream margarine and sugar .Add eggs and vanilla the dry ingredients. Roll and cut with cookie cutters. Sprinkle to with sugar and bake in a moderate oven 350oF for 7-20 minutes.

12.Peanut Brownies

1 c all purpose flour,sifted,1/2 tsp baking powder,6tbsp ccocoa,3 tbsp hot water,1/2 c to 2 tbsp butter or margarine,2 eggs beaten,1 c sugar,1 tsp vanilla,1 c chopped roasted peanuts.

Sift together flour and baking powder. In a medium bowl combine sugar eggs and vanilla. beat until smooth .Blend in the cocoa mixture then the flour. Flour in half of the chopped nuts. Turn onto grease 9z'sq.or rectangular pan. Sprinkle on top cool in pan 10 minutes and cut into sq.bars.

13.Cari-cari de Pata Y Rabo

1 buntot ng baka (ox tail),1 pata ng baka (ox leg)6c water,1/2 c at chuele seeds for coloring,1/2  c water,4pcs.eggplants,2 bundles sitao,1 puso ng saging,1 head garlic,chopped,2 onions,sliced,1/4 c cooking oil,1/2 c bagoong alamang,1 c ground peanuts,1 ctoasted,ground rice, salt.

Boil the buntot & pata in water until tender. Cut into desired pieces &set aside. Cook atsuele seeds in water. Rub to bring it color. Set aside. Cut vegetables into desired pieces. Boil water, drop sitao &parboil.Remove,set aside. Do likewise w/eggplant &puso ng saging.Saute garlic &onions in cooking oil. Add bagoong &atsuete water. Let boil 5 minutes. Blend in ground peanuts &ground rice. Bring to a boil then put in the meats. Just before removing from the fire ,add the vegetables serve w/Bagoong G uisado.

14.Longganiza

1/2kl.pork meat w/fat ground,1tbsp salt,1/2 tsp pepper,1/4 c vinegar,1/2 head garlic minced,1tsp paprika,1/8 tsp saltpeter(salitre),1tbsp.brown sugar,1 doz.large dry pigs intestine (casing).

Mix first &ingredients,thoruoghly.Let stand 1-2 hrs.Using funnel ,fill sausage casing with pork mixture. Tie at 6"intervals &dry in the sun. Keep refrigerated.

To cook: Boil sausages in enough water to cover until water has evaporated. Prick several times with pork .Put in tbsps cooking oil. Fry until done

15.Pan De Sal

2/12/active dry yeast,1 c lukewarm water,1 1/2 tsp salt,3tbsp lard,3 c all purpose flour,sifted,1/2 c powdered bread crumbs.

Dissolve yeast in 1/4 c of the lukewarm (about 10 to 20 minutes). Add remaining lukewarm water,salt,sugar& lard.Stir,then add flour. Mix thoruoghly.turn onto a lightly floured board &knead until smooth &elastic (about 6 minutes). Form into a ball and palace in a greased bowl, turning over to grease top of dough.Cover.with a damp towel and set aside to rise until doubled in (about 1 hour). Punch down and turn dough out on lightly flour &board. Knead highly, then fold the edges in toward the center and form into a long roll about 1 1/2"in diameter. Roll in bread crumbs add allow to rise for 300 minutes. Cut dough into 1"pieces.arrange on ungreased baking sheets with cut sides up, and let stand for 15 to20 minutes. bake in oven 4250F for about 15 minutes or until light brown.

16.Ube Jam /Camote

2 c cube or jams,boiled,mashed,1 c sugar,2 c milk

Combine milk, u be &sugar. Cool over a low flame until thick. Keep on stirring to prevent scorching.

17.Siopao

Dough:

4 1/2 c all purpose flour,3 tsps yeast,1 1/2 luke warm water,4 tbsps sugar,1/2 c pork lard or vegetable shortening

Dissolve yeast in lukewarm water. When dissolved, add sugar & 2 1/2c flour to make a soft sponge. Beat thoroughly with a wooden spoon. Set aside to rise with double in bulk/(about 30-40 minutes). Add remaining flour &1/4 c fat (pork land for greasing is preferable)&knead until smooth. Divide dough into 24to 26 pcs.Depending on desired size. Form into balls.Flatton one ball of dough with the heel of the hand &put filling in the center .Gather the edges together &seal. Lay siopao on square piece of paper (sealed side under)&set aside to rise for 20 to 30 minutes. 

18.Torta

20 pcs eggs,6 c sugar,4 c oil,2 c evaporated milk,6 tbsps baking powder,6 tbsps anise,10 c flour, butter or margarine, baking cup

Beat eggs until lemon colored. Add the sugar gradually until all sugar are dissolved. Add the oil and beat it well. Add the flour a little at a time alternate with milk. Add the flavoring.

19.Marble Chiffon Cake

2 1/4 all purpose flour,3 tsp baking powder,1/2 tsp salt,1 c sugar,1/2 c oil,3 eggs yolks,3/4 c water,8 egg whites,1/2 tsp cream of tartar,2/3 c sugar,2 sq.sweetend chocolate, melted

Sift together twice, the flour, baking powder, salt and c sugar. Make a well in the center and add in order our, egg yolks, water and vanilla. Blend and beat with a spoon until very smooth. Whip egg whites with cream of tartar until soft peaks form. Add the 2/3 c sugar gradually and continue whipping until stiff but not dry. Pour egg yolks mixture over egg whites and gradually fold - in gently with a rubber scraper until just blended. DO NOT STIR. Separate 1/3 of the batter &blend in melted into an ungreased 10 inch tube pan &make a whirl. Bake at 350 oF for 55 minutes or until cake test is done. Invert pan& left hang.

20.Birhtday Cake chiffon cake)

2 1/4 c sifted cake flour,1 tbsp baking powder,1 tsp salt,3/4 c sugar,1/2 c corn oil,8 egg yolks,3/4 c orange juice,1 tsp orange extract,1 tsp lemon sxtract,8egg whites,1/2 tsp cream of tartar,3/4 c sugar.

Sift together flour, baking powder, salt &sugar. Put a flour mixture in a mixing bowl, make a well at the center, then add in order oil,yolks,orange juice and flavorings. Blend with spoon until smooth and sugar is dissolved and batter is free from lumps. Set aside. Beat egg whites until frothy. Add cream if tartar and beat until soft peaks form. Gradually and sugar and continue beating until stiff but nit dry. Fold in egg yolks mixture into the meringue until properly blended. Pout into ungreased tube pan. Bake at 325oF for 45 minutes to 1 hour. or until tester comes out clean. Inver pan immediately and let hang until cool.Unmold cake & place on a cake plate or serving plate. Cover with boiled Icing &decorate sides with border designs.

21.Fluffy Boiled Icing

1 1/2 c granulated sugar,1/2 c water,1 tsp vanilla,3/4 tsp cram of tartar,3 egg whites

Combine sugar and water n a sauce pan. Stir over moderate heat until sugar is dissolves .When mixture starts to boil time 3 minutes then start beating egg whites with cream of tartar with a mixer, using high speed. Continue cooking syrup without stirring for 2 minutes more ,or until it spins a thin thread. Remove from fire add gradually pour into egg whites while beating until fluffy and peaks  hold shape (about 4t o5 minutes). Spread on cake.

22.Bola-bolang Baboy Na Maanghang

2 c giniling na baboy,2 tbsps tuyo,1 tsp. asukal,1/2 tsp asin.1/2 tsp paminta,1 tsp gawgaw,2 sibuyas na mura,tinadtad,2 tsp idinikdik na luya,langis

Initin muna ang paminta sa kawali bago,dikdikin at salain .Isama sa iba pang sangkap,pati ang gawgaw at haluing mabuti.Ilagay sa kawali ang mantika at hayan kumulo.Saka lamang ang mantika at hayan kumulo.Saka lamang simulang ihulog ang bola-bolang baboy.Bayan sa mahinang apoy hanggang sa maluto.

23.Banan Fritters

8 saba banana, medium ripe,1 c flour (sifted) 1 egg beaten,1 tsp baking powder,1/2 "salt,1/2 c fresh milk,1/2 c water,2 to 3 c cooking oil,1 tsp ground cinnamon (optional)1/3 c white sugar.

To prepare batter combine flour,salt,baking powder,sugar,milk and water.Stir.add egg. Mix until the batter is smooth. Set aside.Peel the bananas. Slice length wise. Dip in a batter before frying.

24.Pork Roll

1/2kl.ground lean pork,1 pc.chorizo de bilbao(chopped)2 tbsps.pickle relish,1/4 c grilled cheese,5 slices loaf bread(wet w/milk) 2 pcs.hotdog (chopped)100 grams raisins,4 whole eggs (beaten)1 tsps salt,2 tsps sugar,1/4 tsp black pepper (ground) Aluminum foil

Mix all the ingredients. Cut the aluminum foil into square ,put 1 cup of the ingredients, roll and seal the ends. Steam for 45 minutes or until done. Cool before unwrapping and slice diagonally.
